Award Winning Pecan Lemon Blondies

These Pecan Lemon Blondies won Grand Champion at the Oklahoma Pecan Growers Association Food Show in 2018.

Ingredients

Batter
  • 120g (1 cup) All Purpose Flour
  • 200g (1 cup) granulated sugar
  • 1/2 teaspoon baking powder 
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) butter, room temperature
  • 1/2 cup vegetable oil
  • 2 large eggs
  • zest from 1 lemon
  • 3 tablespoons lemon juice
Icing
  • 1 cup powdered sugar, sifted
  • 1 to 2 tablespoons lemon juice
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350 degrees. Line a 9x9 baking dish with parchment paper for easy removal and lightly grease the parchment paper. 
  2. Combine flour, sugar, baking powder, and salt in the bowl of a stand mixer. Add butter and oil and mix until combined. 
  3. In a separate bowl, mix eggs, lemon juice, and lemon zest. Pour the liquid ingredients into your batter and mix until incorporated. 
  4. Pour into your prepared baking dish and bake at 350 until a toothpick inserted in the center comes out clean, approximately 25 minutes. Allow to cool completely before icing.
  5. To preparing the icing, whisk together the powered sugar and lemon juice. Pour over the cooled lemon blondies and spread evenly over the top. Top with chopped pecans.
