Award Winning Pecan Lemon Blondies
These Pecan Lemon Blondies won Grand Champion at the Oklahoma Pecan Growers Association Food Show in 2018.

Ingredients
Batter
- 120g (1 cup) All Purpose Flour
- 200g (1 cup) granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) butter, room temperature
- 1/2 cup vegetable oil
- 2 large eggs
- zest from 1 lemon
- 3 tablespoons lemon juice
Icing
- 1 cup powdered sugar, sifted
- 1 to 2 tablespoons lemon juice
- 1/2 cup chopped pecans
Instructions
- Preheat the oven to 350 degrees. Line a 9x9 baking dish with parchment paper for easy removal and lightly grease the parchment paper.
- Combine flour, sugar, baking powder, and salt in the bowl of a stand mixer. Add butter and oil and mix until combined.
- In a separate bowl, mix eggs, lemon juice, and lemon zest. Pour the liquid ingredients into your batter and mix until incorporated.
- Pour into your prepared baking dish and bake at 350 until a toothpick inserted in the center comes out clean, approximately 25 minutes. Allow to cool completely before icing.
- To preparing the icing, whisk together the powered sugar and lemon juice. Pour over the cooled lemon blondies and spread evenly over the top. Top with chopped pecans.
