Pecan Crunch Banana Nut Bread
First thing's first: the recipe. We don't mess around here. Pecan Crunch Banana Nut Bread
This is the best banana bread you'll ever eat. It's almost a cross between banana nut bread and coffee cake because of the delicious pecan crunch topping.
ingredients:
Banana Bread
12 tablespoons butter, room temperature
4 ounces cream cheese, room temperature
1 ½ cups granulated white sugar
2 eggs, room temperature
1 teaspoon vanilla
3 very ripe bananas
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon nutmeg
½ cup chopped pecans
Crunch Topping
2 tablespoons butter
2 tablespoons all-purpose flour
⅔ cup white sugar
2 teaspoons cinnamon
½ cup chopped pecans
instructions:
Preheat oven to 350 degrees. Grease either 2 standard loaf pans, 12 mini loaf pans, or 24 muffin tins.
In the bowl of a stand mixer, combine butter, cream cheese and sugar and beat until completely combined and light and fluffy.
Mix in the eggs, vanilla and mashed banana.
In a separate bowl, sift together the flour, baking soda, cinnamon and nutmeg.
Stir the dry ingredients into the wet ingredients until just combined.
Divide batter evenly among your pans.
For the topping, combine all ingredients either in a food processor or just mash them together with a pastry cutter or fork until moist and crumbly. Sprinkle evenly over the top of the batter.
Cook for 20-30 minutes depending on your pan size. The bread is cooked through when a toothpick inserted comes out clean.

Pecan Crunch Banana Bread is basically a marriage of coffee cake and banana bread. And let me tell you, it's a match made in heaven. The delicious, moist bread filled with mashed bananas and chopped pecans is good by itself but when you top it with a crunchy pecan streusel topping, it's pretty much a dessert. And you don't have to limit yourself to bread, this recipe can be made into muffins or even into mini loaves. Mini loaves are so cute and they make great gifts.
They're also adorable and you could serve them with tea or coffee if you have company over.
