Grandma's Pie Cookies
Pie Cookies with Cinnamon, Sugar & Pecans
I'm not even going to do a printable recipe. These are so simple. But don't discredit them just because they're simple. Make yourself a pie for Christmas Eve and make these cookies for Santa with your leftover dough, if you can keep them around long enough to leave a few for Santa.
These pie cookies are just made from leftover homemade pie crust (click for recipe). Why? Because the first rule of making homemade pie crust is never trash your scraps. Actually, I just made that up. There's a lot more important things about making homemade crust, and you can read about them here. But if you make a pie crust dough just to make these cookies, I won't judge you.
Anyway, on to the "recipe." Ready?
Roll out your extra pie dough, use a biscuit cutter or cookie cutter and cut it into circles or whatever shape suites your fancy. Brush with melted butter, top with cinnamon and sugar mix then sprinkle on some chopped pecans. Bake at 350 for about 8-10 minutes.
I use about 1 teaspoon of cinnamon to 1/3 cup of sugar. Scale as necessary.
