Maple Bacon Pecan Pancake Recipe

I try to save the chatter for after the recipe but I thought this bit was pretty important. My husband and I have had a heated debate about whether or not the bacon bits should be in the pancakes. I say bacon makes everything better. He says bacon is amazing but it belongs on the side. So, we need you to weigh in on this debate. Bacon bits in the pancakes or just serve bacon on the side? Maple Bacon Pecan Pancakes
My husband and I have had a heated debate about whether or not the bacon bits should be in the pancakes. I say bacon makes everything better. He says bacon is amazing but it belongs on the side. So, we need you to weigh in on this debate. Bacon bits in the pancakes or just serve bacon on the side?
Ingredients
  • 3 cups all-purpose flour
  • 2 tablepsoons baking powder
  • 1 teaspoon salt
  • 1/4 cup white sugar
  • 1 1/3 cup milk, room temperature
  • 1/3 cup maple syrup
  • 3 eggs, beaten
  • 6 tablespoons butter, melted and cooled
  • 2 teaspoons vanilla extract
  • 1 cup chopped pecans
  • 1/4 cup bacon, cooked and chopped (optional)
Instructions
Fry up some bacon and chop into bacon bits (enough for 1/4 cup bits). Reserve grease. Lightly toast pecan pieces in butter (or bacon grease) with a pinch of salt until fragrant. Set aside. Now preheat your griddle to about 375 degrees. In a large bowl, sift together dry ingredients (sifting isn’t required for success but makes pancakes fluffier). In a medium bowl mix egg, milk, vanilla, butter, vanilla and maple syrup. Pour wet into dry and mix until just combined (a little lumpy is fine) then fold in the pecan pieces and bacon bits. Butter then wipe clean your griddle. Start by testing 1-2 pancakes. Cook the first side until bubbles form around the edges. Flip and then continue cooking until cooked through. The first batch is never the best, so don't do more than a couple pancakes. Those will be delish but they only get better from here! If you need to keep the pancakes warm, do so by laying them in a single layer on a baking sheet in the oven on the lowest setting. Try not to leave them there long or they'll start to dry out. Serve with bacon and pure maple syrup (not the corn-syrup filled substitutes!). Believe me, it's worth it.
