Pecan Chocolate Bundt Cake (EASY)

Sometimes I spend all day making cake from scratch. Sometimes I need something fast, easy, and super tasty. This cake fits the bill! It’s always been a huge hit wherever I’ve taken it and no one has ever suspected that it involves 2 boxes of prepared mix from the grocery store! I got this easy and delicious recipe from my mother-in-law and I modified (improved) it by adding pecans! Ha! Enjoy!

Pecan Chocolate Bundt Cake (easy)

When my mama finds out that this recipe uses boxed mixes, she will be ashamed of me! My mama makes everything from scratch like her mom did. But you know what, sometimes you just need easy. And this cake is an absolute hit every time I make it! Even my mama loves it (but she doesn't know how it's made). Shhh... just don't tell her my secret!!

Ingredients

Cake

• 1 package devils food cake mix
• 1 small package of instant chocolate pudding
• 4 eggs
• 3/4 cup of oil (I use avocado oil) 
• 3/4 cup of hot water
• 1/2 cup of sour cream
• 1 cup pecan pieces 
• 1 bag milk chocolate chips 

Ganache

• 1 bag of milk chocolate chips (12 ounces) 
• 3/4 cup (6 ounces) heavy whipping cream
• 1/2 cup pecan pieces 

Instructions

1. Prepare a bundt pan by spraying it with cooking spray or rubbing the inside with a light layer of butter or oil. 
2. Beat everything except the chocolate chips and pecan pieces together until it is very well mixed. Fold in a the chocolate chips and pecan pieces. 
3. Bake at 325 for about an hour  or until a toothpick inserted in the center comes out clean (start checking on it at 50 minutes). Allow to cool at least an hour before serving!
4. If you'd like to top with ganache, heat 6 ounces (3/4 cup) of heavy whipping cream until it is simmering (but do not allow to boil). Pour hot cream over  12 ounces of milk chocolate chips and allow to sit for 5 minutes. Stir the cream/chocolate mixture until you have a thick creamy ganache. Allow ganache to cool until it reaches desired thickness for pouring over your cooled bundt cake. Immediately top with more pecan pieces (if desired).
